4 Method Steps
-
Preheat oven to 180°C. Lightly grease a 12-hole, 1/3-cup capacity non-stick muffin pan.
-
Sift flour (3 cups self-raising flour) into a large bowl. Add brown sugar (1/2 cup firmly-packed brown sugar) and cinnamon (1 tsp Coles Cinnamon Ground) and stir to combine. Make a well in the centre. Combine milk (1 1/4 cups milk), egg (1 egg, lightly beaten) and butter (90g slightly salted butter, melted) in a jug. Add mashed banana (2 small bananas, peeled, mashed (see note)) with the milk mixture. Pour milk mixture into the well. Using a large metal spoon, stir until just combined (don't over-mix).
-
Spoon mixture into muffin holes until three-quarters full. Bake for 20 minutes or until a skewer inserted into the centre comes out clean. Allow to cool in pan for 1 minute. Turn out onto a wire rack to cool.
-
Cut muffins in half. Fill with cream cheese (Cream cheese, to serve) and honey (Honey, to serve). Sandwich with muffin tops. Serve.

Recipe Notes
You will need 3/4 cup mashed banana. Muffins freeze well in snap-lock bags, but are best eaten on the day they are made.
What are the benefits of banana muffins?
While you probably shouldn’t be eating multiple muffins a day, the fact these are packed with bananas for sweetness rather than sugars is a big plus. Bananas are loaded with nutrients. They are rich in fibre which helps maintain a healthy bowel and also helps manage blood sugar and cholesterol levels for heart health. Bananas are high in potassium, a mineral that is vital in aiding all of the body's functions. They contain vitamin C and vitamin B6, both important for immune systems health, magnesium and vitamin A.
Are banana muffins healthy?
While these banana muffins contain the nutrient dense fruit, they are not exactly a health food. We recommend you enjoy in moderation with a fresh cup of your favourite tea or coffee. If you’re after a more health conscious recipe try these healthy 3-ingredient banana mini muffins.
What makes a muffin light and fluffy?
There are a number of reasons why your muffins may not be light and fluffy. For perfect banana muffins, you can first try bringing your eggs and milk to room temperature (the butter too, but in this recipe we use melted butter.) When combined, this helps create a smooth, airy mixture with air bubbles that expand when baking, resulting in a light and fluffy muffin. Another important tip is to not overmix the batter, as the more you mix, the denser the batter becomes. Don't worry about there being lumps in the mixture, small lumps are fine and will break down when baking.
What else can I add to my banana muffins?
Banana is an ingredient that pairs well with lots of other flavours. Go classic with these choc chip banana muffins, or nuts with banana muffins with peanut butter icing. If you fancy a sweet treat that’s tangy and tropical then give these banana muffins with passionfruit glace icing a try.
Can I make banana muffins with oil?
Using oil instead of butter in your muffin recipe can help keep them moist. A vegetable oil like canola oil is a good option as it has a mild, neutral flavour and won’t affect the recipe’s flavour. If you want a bolder flavour, try using olive oil, like in this recipe for banana bread muffins.
