Keto Cheesy Garlic Bread Ingredients

This recipe contains mostly easily accessible ingredients but do use them all. It will be well worth it in the end. Once you do it once, you’ll have your go-to keto cheesy garlic bread for life.

  • 11 ounces of Mozzarella Cheese, shredded
  • 4 tablespoons of Salted Butter
  • 2 teaspoons of Dried Yeast
  • 2 teaspoons of Inulin (You can use honey but it will slightly raise the carb count, though not a lot)
  • 2 tablespoons of water, warm
  • 6 ounces of Almond Flour
  • 2 teaspoons of Xanthan Gum
  • ½ teaspoon of Salt
  • 2 medium Eggs
  • 1 cup Cheddar Cheese, shredded
  • ¼ cup of Scallions, sliced
  • 2 tablespoons of Chives, sliced
  • 2 cloves of Garlic, finely chopped
  • Pinch of Pepper
  • Pinch of Salt

How to Make Cheesy Garlic Bread

  1. Place the mozzarella and butter into a small saucepan over low heat. Heat until completely melted.
  2. In a small bowl, add the yeast and inulin and mix them. Add the warm water and set it aside in a warm spot to proof.
  3. In a large bowl, add the almond flour, xanthan gum, and salt and mix until combined.
  4. Add the yeast mixture to the almond flour and mix gently.
  5. Add the melted cheese mixture to the almond flour, followed by the eggs. Mix with a spatula, then use your hands (best to wear food-safe gloves) to knead and press into a smooth, tacky dough.
  6. Cover with a clean kitchen towel, and leave in a warm place to rise for 20 minutes.
  7. Roll the dough out, between 2 pieces of parchment paper, into a rectangle about 7mm/ 1/3in thick.
  8. Sprinkle over the cheddar cheese, scallions, chives, garlic, salt, and pepper.
  9. Roll from one long end to the other into a big scroll.
  10. Using kitchen scissors, snip the dough on an angle (about ¾ of the way) and twist each section the opposite way from the previous one. Press the dough together to overlap the sections and form more of an oval shape.
  11. Place on a cookie sheet lined with parchment paper.
  12. Leave in a warm place for 15 minutes.
  13. Preheat oven to 180C/355F.
  14. Bake your bread for 25-30 minutes, until golden brown.
  15. Allow cooling for 10 minutes before gently sliding your pull apart onto a platter or breadboard and serving.

Instructions

  • Add the melted cheese mixture to the almond flour, followed by the eggs. Mix with a spatula, then use your hands (best to wear foodsafe gloves) to knead and press into a smooth, tacky dough.

    2 medium Eggs

  • Cover with a clean kitchen towel, and leave in a warm place to rise for 20 minutes.

  • Roll the dough out, between 2 pieces of parchment paper, into a rectangle about 7mm/ 1/3in thick.

  • Sprinkle over the cheddar cheese, scallions, chives, garlic, salt, and pepper.

      The inulin acts as the food for the yeast, which makes it rise. I don’t recommend leaving it out.

    No, erythritol does not feed the yeast as inulin does. There are no low carb substitutes for inulin.

      Yes, it is. Xanthan gum is a gluten-free “gluten” substitute.

      There are no low carb substitutes for the inulin, sweeteners do not act in the same way. I don’t recommend making the bread without the xanthan gum as it provides structure.

    This was fantastic. I’m making it a second time already. One point to stress is the fat content of the cheese. I didn’t pay attention to the mozzarella I bought last time, and it didn’t melt well at all. As a result, I ended up kneading the batter with my hands which actually worked quite well, but then the batter was sticky and didn’t roll well.

    This time, I’m using whole milk cheese, and everything is going fabulously. I was even able to mix the batter using a fork.

    You’re making this keto thing far easier than I thought.
